Centuries-old stone walls and vaults, bay windows and frescoed ceilings characterise the atmosphere of the nine suites. The design of the furnishings is based on the power of simplicity: with furniture made from old wood, cosy fabrics and carefully applied stylistic accents.

The fink is located in the middle of the lively town centre of Brixen. With the clear elegance of the suites and a spa equipped with sauna, steam bath and a Roman bath in the green inner courtyard, a stay between old walls and round arches allows you to retreat to an almost monastic place of tranquillity.
Restaurant fink is modelled on the naturalness of traditional monastery cuisine. Head chef Florian Fink follows his conviction that fresh regional products and a natural preparation method with few ingredients are the basis for good flavour and wholesomeness.
By exposing and carefully renovating the original walls and round arches, the restaurant brings the historic character of the townhouse to life. In order to emphasise the ambience of the space, the interior design – with linear shapes and selected materials – follows an aesthetic of restraint.
In 1896, Johann Fink takes over the townhouse under the Kleine Lauben as an inn and butcher’s shop. In 2023, in the fourth generation, Petra and Florian Fink renovate the building from top to bottom, bringing the authentic urban architecture of Brixen back to life.
The uncovering of the old walls and vaults is based on respect for the original character of the building. When redesigning the building with natural, ecological materials, the hosts acted in the conviction that sustainable behaviour in all areas creates a quality that can withstand the challenges of the future.
The redesign of the hotel is based on the principles of sustainability in all areas, from natural building and furnishing materials to the water- and energy-saving daily operation of the hotel and restaurant.
Sustainable thinking and actions are taken into account in every detail: the kitchen uses daily fresh, preferably plant-based products that come from the monastery gardens in Brixen or from organic farms in the surrounding area. Petra and Florian attach great importance to good teamwork, which is expressed daily in the friendly, cordial interaction within their team.
